1 package of Oreo cookies
1 plastic (Ziploc) bag
16 oz (two packages) of cream cheese, softened
1/2 cup granulated sugar
1/2 teaspoon vanilla extract
2 eggs, lightly beaten
1/2 cup (8 oz container) sour cream
Preheat oven to 300 degrees Fahrenheit. This cheese cake can be made as a cake in a spring form pan or as cupcakes.
For the spring form pan: Spray sides of pan with cooking spray and place parchment paper in the bottom of spring form pan. To get a perfect sized piece, trace the pan and cut out the parchment paper. Cover the bottom of the pan with a single layer of Oreos.
For the cupcakes: place liners in cupcake tin. This recipe makes about 18 cupcakes. Place one Oreo in each liner.
Once the oreo’s are in place, crush the remaining oreo’s in a plastic bag. Crush by hand or with a rolling pin. In a medium bowl, beat cream cheese, gradually adding in sugar, vanilla, eggs and sour cream, mixing well after each addition. Stir in crushed Oreo’s by hand and pour batter into spring form pan, if making cupcakes spoon the batter into liners until almost full. Place in lower third of oven and bake for 25-30 mins.
