Sweet-Potato and Sausage Hash
2 large sweet potatoes (about 2 pounds), cut into 1/2-inch pieces
1/2 pound bulk pork sausage
2 tablespoons vegetable oil
2 bell peppers (any color), chopped
1 onion, chopped
2 cloves garlic, thinly sliced
2 teaspoons ground cumin
Salt and pepper
Green salsa, for serving
Preparation
In a large nonstick skillet, cook the sausage over medium heat until browned and crumbly, about
10 minutes; transfer with a slotted spoon to paper towels to drain.
While sausage is cooking, cut sweet potatoes into ½” – 1” pieces. Leave skin on for added
benefits.
Add oil to skillet, add sweet potatoes to skillet, cook 10-15 min, stirring periodically. While
sweet potatoes are cooking, chop onions, and bell peppers.
Add the bell peppers, onion and garlic to the sweet potatoes and cook until softened, about 15
minutes. Add the sausage, cumin and salt and pepper, cover and cook for 15 minutes more or
until sweet potatoes are cooked through.
Serve with salsa or guacamole.

Sweet Potato French Toast Sticks
- Cut sweet potatoes into thick “sticks”
- 1Tbsp olive oil
- 1 tsp – ½ Tbsp Cinnamon
Put sweet potatoes, olive oil and cinnamon in bowl or ziplock bag to mix
Cook in Air Fryer for 10 min at 400 or in oven for 15-20 min at 400
Dip in peanut butter, almond butter, syrup or any other toppings!
