Are you nervous about trying something new…in the kitchen?!
Let’s consider yesterday’s turkey extravaganza. I have spatchcocked the turkey before, but I tried a newer version of it that I had not before: the flattened frog! It’s when you not only flip the bird over and remove the backbone, but also clip along the inner pocket between drumstick and breast bones, and both sides of the cavity enough to press down and flatten the bird. So, when it’s time to season and cook, that bad boy is flat on your roaster or baking sheet. Makes it much easier to season and reduces the cook time as well!
Oh, and the flavor—-yumm! Especially if you have brined the bird to give it more flavor, since turkey and chicken tend to be a bit flat if not properly seasoned.
It turned out great, better than I had expected! And, I smoked my 17 pounder as a smoked ham heated up in the oven, freeing up some much needed space.
