Kathy Keene’s Favorite Chili
Ingredients:
- 1-1/2 lbs. ground round or chuck
- 1 large Spanish onion, chopped
- 10 ribs celery, chopped
- 2 (15-1/2 oz.) cans dark red kidney beans, drained
- 2 (14-1/2 oz.) cans Del Monte Mexican tomatoes or stewed tomatoes with chili seasonings
- 2 (15 oz.) cans Contadina tomato sauce, extra thick and zesty
- 1/4 cup brown sugar
- 1/2 cup catsup
- Salt to taste
- 5 red pepper flakes or more to taste
Directions:
- In a large pan, brown the ground beef with the chopped onions.
- Transfer to a large Dutch oven and add the remaining ingredients.
- Bring to a boil, then reduce heat and simmer for 1 to 2 hours, or until the celery is tender.
