This week’s recipe is smooth, rich, and totally irresistible… it’s Kathy Keene’s French Silk Pie! If you’re a pie-lover, this one’s a must-try. Add it to your collection and pull it out whenever you’re craving something sweet. Enjoy!

French Silk Pie
Ingredients:
- 1 cup sugar
- 1 cup butter (not margarine)
- 2 sqs. unsweetend chocolate, melted and cooled
- 1 T. instant coffee crystals
- 2 eggs
- 3 tsp. brandy
- 1 baked pie crust
- 1 cup coarsely chopped nuts (pecans)
Directions:
- In a mixing bowl, cream together the sugar and butter until light and fluffy.
- Add the eggs one at a time, beating for 3 full minutes after each egg (this is very important).
- Stir in the cooled, melted chocolate.
- Add the instant coffee crystals, brandy, and chopped nuts. Mix until well combined.
- Spoon the filling into the baked pie crust.
- Refrigerate for several hours, or until the pie is fully set.
