Cheesemakers from more than 30 states are in Green Bay for this year’s U.S. Championship Cheese Contest.
Today is the second day of the three-day event.
John Umhoefer of Wisconsin Cheesemakers Association says it’s a technical competition. He says it’s not just about taste, and the judges are looking for minute defects in the cheese.
There are also categories for butter and yogurt. It’s a biennial event and there’s an 11 percent increase in entries this year.
