Spice Cake Mix Cookies
- 1 (15.25 oz.) box spice cake mix
- 1/2 scant cup vegetable oil (or 7 Tbsp. melted butter)
- 2 large eggs
- 1/4 cup cinnamon/sugar mix (1/4 cup sugar + 1 Tbsp. ground cinnamon)
- Optional Mix-ins: 1/2 cup raisins, baking chips (cinnamon, white chocolate, or butterscotch), nuts
Directions
1. Preheat oven to 350 degrees and line a baking sheet with parchment paper
2. In a large bowl, whisk together the cake mix, oil, and eggs until combined. Add in any additional mix-in’s (if desired). Refrigerate dough for 15-20 minutes.
3. In a shallow bowl, add the cinnamon/sugar mixture. Using a medium cookie scoop or spoon, scoop dough and roll in cinnamon/sugar mixture before putting on baking sheet.
4. Bake 9-11 minutes or until the cookies are set but before they brown. Let cool on the baking sheet a couple of minutes before transferring onto a cooling rack. Store up to 3 days in an airtight container.
