Chef Jeff’s “Stuffed” Green Peppers
- 1 Cup Brown Rice
- 1 Pound Ground Meat (any will work)
- 2 T Canola Oil
- 1 Cup Onion, large dice
- 1 Cup Celery, large dice
- 1 28oz can Tomatoes, crushed
- 1 15oz Tomato Sauce can
- 2 T Brown Sugar
- 1 T Garlic, fresh, chopped
- 1 T Italian Seasoning*
- * Italian Seasoning includes thyme, oregano, marjoram, basil, rosemary, and sage.
- 1 T Salt
- 1 t Black Pepper
- 3 Green Peppers, fresh, quartered
Instructions
1. Pre-cook the brown rice until al dente. Cool and reserve.
2. Brown the ground meat and remove any residual grease. Cool and reserve.
3. In a large kettle, sauté the onions and celery in the canola oil until translucent.
4. Add the crushed tomatoes, tomato sauce, brown sugar, garlic, Italian seasoning, salt, and black pepper. Bring to a simmer.
5. Add the pre-cooked brown rice and the browned meat to produce the filling. Return to a simmer and cook it until the filling begins to thicken.
6. Pour the filling into a 9 x 13 glass pan and spread evenly. Arrange the quartered green peppers on top of the filling. Cover with foil.
7. Bake the “stuffed” green peppers at 350° F for about one hour.
8. Serve immediately.
