For our third annual “Thanksgiving Extravaganza,” Chef Jeff and Good Neighbor Kathy Keene joined Hayley Tenpas during Focus Fox Valley.
During the hour, Chef Jeff gave advice on turkey and leftovers. Kathy also shared a recipe for Apple Cranberry Sweet Potato Bake. All with a healthy amount of laughter and teasing!
APPLE CRANBERRY SWEET POTATO BAKE
- 6 small sweet potatoes, peeled and cubed into 1/2 inch pieces
- 2 apples, peeled and diced
- 1/2 to 1 cup fresh cranberries
- 2 T. Refined coconut oil (looks like Crisco, solid form)
- 2 tsp. Cinnamon or apple pie spice
- Pinch of salt
Grease a 9×13 baking pan with refined coconut oil. Layer the following in order: 1/2 of the sweet potatoes, 1/2 of the apples, 1/4 to 1/2 cup cranberries. Pinch of salt.
Repeat the layers. Dot with the refined coconut oil. Cover and bake at 375 degrees for 1 hour or until sweet potatoes are tender.
