She shared a few updates and of course brought along some delicious recipes. Enjoy!
INDIVIDUAL HAM CASSEROLES
- 20 large eggs
- 1/2 tsp. chili powder
- 8 oz. thinly sliced deli ham
- 1-1/2 cups grated or shredded cheddar cheese
- 1 green pepper, finely diced
- 1 small or medium onion, finely diced
- Salt and pepper
Preheat oven to 350 degrees. Generously spray 24 muffin cups with cooking spray. (2 standard muffin cups.)
Crack eggs into a bowl; add 1/2 tsp. each salt and pepper and the chili pepper.Whisk until combined. Add the ham, cheddar, green pepper and onion; stir.
Scoop mixture into the muffin cus. Bake until puffy and just barely set, 20 to 22 minutes.
Within a minute or two after removing from the oven, the casseroles will start to fatten. This is normal. Run a knife around edges of each muffin cup and lift the casseroles out of the pan. Serve warm or at room temperature. Makes 24.
CREAMY HASH BROWNS
- 1 pkg.(32 ounces) frozen cubed hash brown potatoes
- 8 ounces process American cheese, cut into small cubes
- 2 cups (16 oz.) sour cream
- 1 can cream of celery soup, undiluted
- 1 can cream of chicken soup, undiluted
- 1 pound sliced bacon, cooked and crumbled
- 1 medium onion, chopped
- 1/4 cup butter or margarine, melted
- 1/4 tsp. pepper
Place potatoes in a 5 quart slow cooker. Combine the remaining ingredients in a bowl and pour over potatoes; mix well. Cover and cook on Low 4 to 6 hours or until heated through and potatoes are tender. Serves 12-14.
CHEESECAKE STUFFED STRAWBERRIES
- 1 (8 ounce) package cream cheese, softened
- ½ cup confectioners’ sugar
- ½ teaspoon vanilla extract
- 1 pint fresh strawberries, hulled and cored
Beat cream cheese, confectioners’ sugar, and vanilla extract together in a bowl until smooth; spoon into a piping bag or a resealable bag with a corner snipped.
Fill cavities of cored strawberries with the cream cheese mixture. Refrigerate until ready to serve. Serves 20.
