Chef Jeff’s Curried Chicken
Curry Powder — Makes 2/3 Cup
- Turmeric, ground ¼ Cup
- Cumin, ground 1 Tablespoon
- Cardamom, ground 1 Tablespoon
- Coriander, ground 1 Tablespoon
- Ginger, ground 1 Tablespoon
- Dry Mustard, ground 1 Tablespoon
- Cayenne Pepper, ground 1 teaspoon
Curried Chicken — Makes 4-6 servings
- Butter (or Oil) ¼ Cup (½ stick)
- Onions, fresh, shards 1 Cup
- Carrots, fresh, medium dice 1 Cup
- Celery, fresh, medium dice 1 Cup
- Garlic, fresh, minced 1 Tablespoon
- Chicken Breast, strips 1-1½ pounds
- Flour, all purpose ¼ Cup
- Milk, whole or other 2 Cups
- Curry Powder (above) 2 Tablespoons
- Chicken Base, dry 1 Tablespoon
- Black Pepper, coarse ground ½ teaspoon
- Peas, fresh or frozen 1 Cup
1. In a medium kettle melt the butter or heat the oil. Sweat the onions, carrots, celery and garlic in the butter or oil until about half done.
2. Add the chicken breast strips and cook about half way.
3. Add the flour to pick up any residual butter or oil and to make a roux.
4. Stir in the milk and bring to a simmer to make a creamy sauce.
5. Stir in the curry powder, chicken base and black pepper. Mix thoroughly.
6. Stir in the peas and bring back to a simmer.
7. Serve immediately with appropriate accompaniments like basmati rice.
Chef Jeff’s Home-style Baked Beans
- Great Northern Beans, soaked 1 Pound
- Bacon, diced 8 ounces
- Onion, yellow, medium, diced 1 each
- Tomato Paste, canned 6 ounces
- Water 1 pint
- Molasses 6 ounces (3/4 Cup)
- Sugar, brown ½ Cup
- Vinegar, apple cider ¼ Cup
- Mustard, brown, prepared 2 Tablespoons
- Worcestershire Sauce 2 Tablespoons
- Hot Sauce 1 Tablespoon
- Salt 1 teaspoon
- Black Pepper, coarse ground 1 teaspoon
1. Soak the great northern beans for at least 8 hours before preparation.
2. Simmer the great northern beans in unsalted water for one hour. Drain.
3. Render the bacon in a large skillet, adding the diced onions when the bacon is halfway through cooking. Drain and discard the bacon grease.
4. To the bacon and onions add the tomato paste, water, molasses, brown sugar, apple cider vinegar, brown mustard, Worcestershire sauce, hot sauce, salt and pepper. Bring to a simmer.
5. Stir in the beans. Place the bean mixture into a suitable baking dish. Cover and bake the beans for 1½-2 hours at 300° F. Serve immediately.
