Chef Jeff joined Hayley in studio to talk turkey before Thanksgiving Day! What he wasn’t prepared for, was a surprise visit from our Good Neighbor Kathy Keene.
Chef Jeff’s Pumpkin Pie Spice
Yield: About 9 Tablespoons
- 1/3 Cup Ground Cinnamon
- 1 T Ground Nutmeg
- 1 T Ground Ginger
- 1 T Ground Cloves
- 1 T Ground Allspice
In a small bowl, thoroughly combine all of the spices. Use immediately or store in a tight container for future use.
Kathy Keene’s Turkey Strata, Cheese Strata
- 12 slices bread, crust removed
- 4 cups milk
- 8 eggs
- 1 lb shredded Cheddar
- 3 cups cooked, diced turkey
- 1 tsp dry mustard
- 2 tsp. minced onion
- 1/4 cup butter or margarine
- 2 tsp salt
Butter a 9×13 inch baking pan. Place six slices of the bread in bottom of pan. Spread half of the cheese over bread and all of the turkey. Top with remaining 6 slices of bread. Beat eggs, milk and spices; pour over bread and dot with butter. Cover; refrigerate overnight or 8 hours. Add remaining cheese and bake at 350 degrees F for 1 hour.
